Spike Headcanon:

Spike is actually an adult dragon. No one but Celestia knows this, though.

Celestia obtained him as an egg centuries ago. However, she cast an Age spell upon him to keep him from hatching. She then used him as the entrance exam for her School for Gifted Unicorns. There were wheels within wheels working here, though:
>The young unicorns took the test at face value--could they hatch a dragon's egg?
>The teachers believed it was impossible and treated the test as a "Kobiyashi Maru"-type test of character.
>Celestia, like any self-respecting wizard, was secretly using the test to see if any young unicorn had magical power strong enough to challenge her. If any unicorn could nullify the age spell enough for the egg to hatch, that unicorn could be a threat.

Along comes Twilight Sparkle, and not only does she nullify the Age spell, she dispells it completely, causing Spike to revert his "natural" age that had been held in check all these years. This is why he grew to a massive size in seconds. Celestia had to quickly re-apply the spell, but only dialed Spike down to a hatchling so that it appeared like Twilight passed the test.

The second time Spike grew into an adult, during "Secret of My Excess", his native greed caused him to overcome the effects of the age spell and start growing up rapidly. Zecora's theory that he was aging DUE to his greed was almost but not quite correct: The greed wasn't causing him to grow, it was causing the Age spell to weaken. He unwittingly reverted back to his baby dragon form out of his love for Rarity, which tempered his greed and allowed the Age spell to do its job again.

How long Spike's going to remain a baby dragon is probably another one of Celestia's secret tests. Presumably, Twilight will eventually learn the Age spell, and at that point she'll be able to turn Spike into an adult if he so wishes.
