Not the best song, a little simple lyrically, but the music was solid. It fit the episode really well, the harmonica and banjo set the country bluegrass thing, and the fiddle made it actually a complete song, rather than almost a parody of bluegrass music like a lot of montages set on farms are.

I don't think they are poor so much as poorly staffed. They only have so much labor to use to extract wealth from their land so I imagine they could do more if only they had more family members (see: apple bucking season, zap apples, super cider squeezy)
