Ancient Greeks had different ideas about gods, too. The "unified pantheon" was really a hodgepodge of tons of different local cults mashing up stories and raising and lowering the ranks of their gods because of power politics, really. A alternate alterpration could be: the shiloette we saw WAS celestia reminsing, and the shadows attacking ARE techincally moon shadow demon things, BUT the shadows litterally haunted the kingdom for years like a bandit horde so Nightmare Moon's return probably drew up the remenents power, hence why the Nightare Moon that was fought in Season 01 is weaker than the one in legends (because the dark powers had pissed away their efforts futily attacking Canterlot on their own, leaving less power for Nigthmare Moon to eventually draw on when she inevitably returned)
