Depending on your reading of the comics, it's apparently noticeable as a pattern for both Rarity or Twilight to go ultramax on workload and burn themselves out. Rarity might need it just to keep food on the table but even sometimes it seems she bites off more than she can chew. The show at least reflects that she accepted the Sparkle Shores order even though it was nearly impossible to complete.

I dunno, I wouldn't call it fanon or headcanon but it's just one possible reading of the character. I know a lot of people like her so that colors it.

A dream journal is a good start as it allows you to more easily identify when you're dreaming.
Try and find certain things that just don't make sense like light switches not working, breathing under water etc, like anything else you'll get better with practice.
Although lucid dreaming can be spontaneous, I just noticed that shit wasn't making sense and therefor I must have been dreaming.
