So, we see all variety of creatures in the Everfree forest, from all sorts of mythology.

It's very likely that humans could exist, and extremely likely they had a great cultural exchange at some point. However, humans do not have to be the ONLY bipedal creature.

I see it as more like the DnD universe, or LotR (practically same thing). There are humans, yes, but there are a variety of humanoids, elves, dwarfs, orcs, etc, as well as many, many non-stereotypical fantasy humanoids.
