Actually I was thinking of the same thing myself. There are two possibilities the way I see it.

1. They were able to do such a massive task through collective unicorns working in tandem. Obviously raising the moon and Sun is a task to much for a single unicorn, but perhaps through collective magic of many unicorns it could be accomplished. Perhaps they used such tactics in order to barter with the earth ponies.

2. Alternatively, it could be they did it through dark magic rituals, to give them enough power. Okay, this may just be because I have been playing too much Dragon Age lately, but perhaps the Unicorn society of past was similar to the Tevinter Imperium, a society where magic ran rampant and unchecked, and the use of dark magic allowed unicorns much more powerful feats. Though I suppose that doesn't include the ability to farm crops. Plot hole, but it is something to think of.

God damn, the very existence of this pony and being reminded of her always blows my mind. To be fair, Zecora isn't COMPLETELY a magical negro. While her first episode is the traditional Tolerance Aesop that features her folksy wisdom saving the day for the "White Heroes," (in b4 TWILIGHT IS BLACK), usually when people say Magical Negro thats not what they're talking about.

Rather, its the Bagger Vance "My only purpose is to enrich the life of of the white protagonists, I have no humanity of my own and will no assume the hero role even thought I easily could" type that people have a problem with and use the term to disparage. Zecora's really only done that once, during the Cutie Pox episode. And frankly, we can almost give that a pass because pretty much any of the characters probably would have done a similar "I know whats going on but let everyone else figure it out on their own so Applebloom really learns her lesson" plan in that situation.

Still, her status as a minority with serene demeanor, folksy wisdom and minimal personality certainly puts her in the constant magical negro danger zone.
