Spike's still young so he's probably not sure of how he really feels, if it's legitimate or just a childhood crush. By stopping him saying it she stops their final moments being this awkward thing, and if they get saved, it removes what probably would have been an awkward existence.

More or less Spike is still a child, and the fact that she called him "Spikey Wikey" throughout the episode was indicative of it. I honestly don't think Rarity feels anything for Spike other than friendship. So stopping the confession saves his feelings from any kind of heartbreak at the end.

It took me a few days to get around to watching the episode where Rarity gets a pet.
I didn't watch the episode with the mysterious mare do well until about 2 days before the next episode came out, and even then I only skimmed it.
I haven't watched the episode that came out after that one yet, and I watched about 30 seconds of the new episode.
