The variant "hooves" is "less correct" than "hoofs" insofar as it is not in keeping with the rules of the English language. This does not mean that "hoofs" is more commonly used; it is simply the dictionary doing what it's supposed to: cataloging the language.

A good example of this is to note that the plural forms of the word "octopus" in the OED are listed as, "octopuses, octopi, octopodes." Octopuses first because that is the "correct" way to make that word plural; "octopi" second because that is a commonly used variant regardless of etymological failures and "octopodes" last because it bears noting that the word comes to us through the Greek, not the Latin.

Fair enough, but I don't see how that makes it more "correct", even given that it better follows the 'standard' rules of language - language evolves naturally, the words in common usage ARE the correct terms. It's just a method to convey ideas and concepts, and facilitate communication, the common usage IS the correct one.

But understanding language is reactionary, it's seeking to understand WHY it's like that, not trying to chart out a path. We have a standard for pluralisation not because somebody decided we should, but because it happened naturally as people developed the language in smaller communities and had the good bits catch on. Studying that is important for a lot of reasons, but one of those isn't to tell people they're using the wrong words when those words are universally understood - because at the end of the day, that's all language is trying to do.

The star of Dan Vs., a great show that also airs on the Hub. The plot basically consists of Dan exacting hugely disproportionate retribution on minor inconveniences (Example: An animal shelter across the street keeps him up at night, so he blows the place up.)
