I forget which expansion added missions... In Nomine I think. Really, if you like the demo, definitely go for all of the expansions, they add so much to the game.

That said, the demo is more of a sandbox: you can do anything you want, from try to conquer the world to becoming a trade empire. I, naturally, prefer conquest. Why not conquer your neighbors as practice?

A good starting position is unifying Spain as Castille, then graduating to unifying Scandanavia as Sweden, Great Britain as England, and Italy as any Italian minor except Papal States (Milan is a good choice).

First one... The instruments aren't BAD but they could stand to have some reverb to them. As they stand now they're a tad tinny. After the CLANG one minute in it really becomes a gorgeous display, but the staccato strings are a taaaad bit thin.
The second one... the intro is beautiful. Love the switch from beautiful to badass, you execute it in a way that excites without being jarring. The back-and-forth between the modes is very well done! The issue of tinny instruments is SLIGHTLY mitigated here, but I'd still do some fine-tuning on the staccato strings.

Any program with "Music Maker" in the title is usually lower-end, or for those who want to make one sort of thing and be fine— I can see that you're definitely more poised for musical success than that. You might need some better software, or at least some better samples if you can't afford an upgrade.

If you can afford an upgrade:
If you're on Windows, I recommend Cakewalk, Cubase or Nuendo, or even FL Studio if that's your thing.
For OSX/Mac, Get a copy of Logic Pro (if you know how to work Garageband, Logic controls much the same way but with a fuckton more options).
Linux? I'unno... I've heard good things about LMMS and Ardour. /g/ might be of more help on this front.

For the record, I think you're pretty much 95% of the way there as-is; just adjust a couple of sounds and you're golden.
