I have no idea what functionality GIMP has regarding this, because I can't stand using that thing but, in case you get photoshop sometime I thought I'd post what I do for stuff like this, and maybe some of it can translate. In photoshop, I use the quick selection tool for stuff like this. Hold down the magic wand button and you'll get that. Then you drag around the outside to create the selection (it's like the magic wand but you get to hold it down), and hold alt to remove any areas you don't want. Then you'll want to use "refine edge" at the top in the toolbar. The settings you want depend on what you're doing but. I usually put the radius up a bit, the smooth up a bit, contrast up a bit to sharpen the edges and shift the edge in a bit to cut off any blended colours (in a low quality pic like this).

So yeah, if GIMP has some kind of refine edge thing you can find, that's probably what you'll want to use.

Here's my version which is super lazy because I did it in a minute and didn't bother to clean up the inner edges.

IMO a non-standard bodytype is the best method of personalizing an OC without making it obnoxious. Most people opt for weird distracting color combinations or accessories, but just making your pony a little taller/shorter and fatter/thinner can add personality and make it memorable.
