People always say things like this as if AJ is getting left out, but she's a major player in a lot of episodes because some of the other ponies (mostly Rarity and sometimes Dash) play off her so well.

She doesn't get a lot of solo episodes, but she plays a big role in episodes like Sisterhooves Social and even had a rather big role in this recent episode. AJ is like the constant "good and honest" pony that serves to highlight the flaws of most of her friends. Not a knock on her at all, but that's the role she seems to have filled.

She's had a much bigger part in the previous episodes than Dash and Fluttershy by a country mile. Of course Dash has two episodes coming up, but still.

AJ being so down to earth allows the other characters to play off her. You see it most often with Rarity, they take and run with the whole city fashion diva / down to earth farmer angle a lot in FiM. Like in Sisterhooves Social, she and Rarity were able to talk openly and honestly and it let her understand her flaws and move forward positively in her relationship with Sweetie Belle. Similarly, she's there to be a role model and advice-giver to Applebloom in a lot of the CMC episodes.

AJ is a pretty important character in the grand scheme of things. She usually won't do any of the real funny stuff like Rarity/Pinkie/Dash but she knows her role and plays it very well.

I think the ponies in FiM are all good because while they are generally completely true to their elements of harmony, they've all fucked up at least once.

Twilight - completely misused magic to try and serve her own ends in Lesson Zero

Rainbow Dash - disloyal to Fluttershy in Dragonshy and kept cheating in Fall Weather Friends

Pinkie - Lost the ability to laugh and became depressed/angry with her friends in Party of One

Fluttershy - got really fucking pissed off at the animals and tried to capture them in Best Night Ever

Rarity - not generous to Sweetie Belle in Sisterhooves Social

AJ - not honest with herself or the town in Applebuck Season

These all ended up causing either problems (Twilight and AJ) or would have hurt relationships (Pinkie and Rarity), but I think in the end the show gave them the opportunity to understand and learn from their mistakes, which is good. Twilight was forgiven and understood her problem, everyone learned to stay loyal to Fluttershy, Rarity and Sweetie Belle love each other and make sacrifices, etc etc
