We've seen Rainbow Dash catch a statue, and both Rarity and Twilight carry Tom the boulder, so strength probably isn't an issue for any of the races.

More like they are the more numerous, its pretty clear the actual aristocracy has to be unicorn based- as pony "power" is derived entirely from magic. The princess rules with it, her school teaches it, and the unicorn city is the national capital. Earthies are just the most common type of pony. Pegasi may be numerous too, but its hard to tell, we don't know how many of them stay up in the cloud towns with their own kind relative to how many go down to the ground.

Sweetie Belle got her father's white coat, but I'm guessing the pink/purple in her mane is coming from her mother's side.

Like humans, pony genetics are a bit of a mishmash. Traits are obviously inherited, but there's probably no rhyme or reason why certain traits are and others aren't.
