The EU3 wiki is also of note; it's of varying usefulness because many pages are wildly out of date (when they tell you to ignore infantry and only build horsies, they're not taking into account speed changes and bonuses for well-built armies put in later on). Still, there's some good stuff on there, especially the discussions about the usefulness of various National Ideas and the country-specific pages are worth looking at to get a feel for the game.

If you like conquest and empire building, EU3 is unarguably superior to civilization. That's what EU3 is about.

Paradox has other games that suit other needs. Hearts of Iron is more combat focused, Crusader Kings focuses on dynasties and shit.

It's basically more of a question of what kind of strategy you want.

I'm really not as deep into the genre as a lot of people and don't know if I can answer your questions properly. I can tell you that Civilization is a fine series and I've had plenty of fun with it, but it's far less complex than the stuff Paradox puts out. It is generally agreed upon that if you are at all interested in the genre then EU3 is a good place to start. It's probably the most user-friendly and understandable without being accustomed to genre conventions.
