About Rarity.

OBVIOUSLY the authors did the right choice not including her. Just think about it, if she met Luna, not only would she adore her, but she would also try and prevent her from dropping the "noble" behavior, as she would have idolized it. The episode would have become confusing and stupid, and been more about a conflict between Rarity and Twilight. The other ponies didn't really participate that much for various reasons, but can you honestly say Rarity would pass up an opportunity to spend as much time as possible with the princess? No. Of course not.

I think it is more along these lines:

Nightmare Moon was an evil personality trapping the true Luna from being seen. NMM's modernisms are simply because she is a different person from archaic Luna (ie 1000-years-ago). Once NMM was defeated, we saw personal, non-formal speech out of Luna (I'm so sorry!), which is probably only something she would say in private (I doubt even IRL that royal family members spoke to each other in formal terms while in private settings). Her only exposure to modern society was the end of S1E2, when she is an attendee of a typical worship-the-Princesses ceremony as she probably attended often before NMM.

I don't consider them out-of-character as much as I consider them as moments demonstrating different facets of her personality that weren't seen before. Interestingly enough, until the 80s, similar standards WERE required for childrens' TV. Before then, it was illegal to have merchandise-driven cartoons aimed at children, under the rationale that it wasn't right for kids to watch what are essentially 30-minute toy commercials. This meant that studios didn't spend a whole lot of money on producing cartoons since they wouldn't be able to get a lot back, which was why American cartoons were so shit in the 60's and 70's. Then Reagan and his lot came in and deregulated the FCC (among other things), allowing studios to make merchandise-driven shows like Transformers, G.I. Joe, and, well, My Little Pony. So I guess that's one dubiously positive thing the Reagan administration brought us.
