You have to remember that it is still largely a children's show, and as such is bereft of explanations as to why things work the way they do and almost everything is subject to change on a whim.

This also causes things to sometimes become hilariously grimdark when over analyzed by the adult mind, and is part of the show's charm. Celestia dictatorship comes to mind in particular.

Canonically, Celestia would never put out the sun or moon as it would also endanger her people. In all likelihood, she would likely do something a lot more playful or efficient - like make all of their weapons turn into something harmless or just erecting an impenetrable barrier.
