I have a different take on it.
Personalities fluctuate quite a bit even in the real world, and if you compare some episodes of the show you'll see the characters doing things that it seems they would never do according to the personality set out by other episodes. So, you can treat fanfiction in one of two ways:

You can constantly compare how everybody acts to the way they act in canon, or you can treat the story as if it were canon and accept that people/ponies have off days.

The problem with the former is the issue you've been experiencing, where everything seems off. The problem with the latter is that it becomes much more emotionally powerful for you.

I'm thinking of drawing a picture where Princess Celestia shakes Twilight's hand and proceeds to awaken more of her powers by doing so. In turn, Twilight is so overwhelmed that she begins hallucinating, when in reality, she's seeing the Princess' true form, an enormous eyeball that glows, with eyelashes moving erratically and flaring in all directions, to represent a "sun" of sorts. One of the difficulties I'm having with writing Pinkie in any way is the fact that in the show, nothing seems to phase her ever, with the very notable exceptions of Party of One and The Best Night Ever. Otherwise, everything just bounces off her ridiculous cartoon self.

Are there any instances of Pinkie Pie showing emotion more than just "lol randum" in the show that I'm not remembering? I'm trying to wrap my head around the idea of writing her into a situation that she can't just laugh off entirely.

In all seriousness though, I wouldn't say I'm exactly proud of anything I write. I write it because I want to write it. In fact, the only reason I wrote Flutterstocks was because I felt a need to challenge myself on what I had recently learned about writing and doing a rapefic seemed like a challenge because

1) I wasn't so willing to do it

2) I had to write it well despite it being what it was

As for writing fanfiction, I wasn't kidding about what I said before. You sit down and you just write it. Think of something you want the characters to be doing and write about it. Make sure that you like writing what you're writing though. If you're not enjoying it than why are you writing it. I made that mistake with Flutterstocks.
