I actually think that Rarity would relax a lot more. Instead of being extremely detail oriented and fussy, she'd slouch and sink into a comfy chair. More than likely, she'd giggle intermittently and keep doing the 'I'm not drunk, I can still walk a straight line' tests every once in a while. She might also try to sneak alcohol when no one's looking.
