I have to leave right now to get there before my shift begins.

Snails x Pinkie Pie was originally requested "as a joke" and the guy only replied "not as planned" when it was actually delivered. Well lets look at the episode cutie mark chronicles, a rather large milestone in the first season explaining in depth how each pony got their cutie mark.

Let's take Dash for example, in her flashback she challenged some bullies to race and did a rainboom resulting in the other ponies getting their cutie marks.

Now let's look at Fluttershy. She was teased for about 10 seconds, fell out of the sky, landed in a field, and sung about animals. Hardly anything interesting happened for her at all. She's just not an interesting pony.

It's funny that you should bring up Rainbow Dash, I personally feel that she's the most "flat" character, and you even brought up the reason why: almost every time she's the focus of an episode, she races somebody or just goes fast. Fall Weather Friends? Race against AJ. Sonic Rainboom? Flight contest that she wins by going really fast. Cutie Mark chronicles? You brought it up yourself.

Comparatively, Fluttershy goes through practically every phobia there is in Dragonshy and then steps up to tame a fucking dragon, she kidnaps Celestia's pet bird when she thinks it's being mistreated and eventually, she even goes on a rampage when a few animals don't want to listen to her.
The series actually expands on her overproctetiveness and somewhat "know-it-all" attitude when it comes to animals. To each his own, I guess, but personally, I think that's way more interesting than "Yeah, that one time I won a race because I went really fast".
(And yes, I realize that this is not all Rainbow Dash is about, but it comes up incredibly often in the series.)

Anyway, the first 2 episodes you mentioned just fortify her love for her friends and animals, we still know nothing about her except that she's just as caring as the rest of the ponies. Chronicles was easily the high point of the entire series in my opinion.
And Dash's scene was the climax to that episode so there you go.

It's as you say though, people enjoy this show for a vast array of different reasons. A lot of people say that FPK was the best episode because of how much it resembled old Looney Tunes, a lot of people say it was the worst because it was so different, agreements cannot be reached.

Dash was interesting that episode because she was the catalyst for every one of her friends. But since you want more examples of interesting ponies I'll try to provide some more for you, all subjective of course.

Twilight has great, raw magical power and is an apprentice to the fucking princess herself. She and her friends beat nightmare moon in episode 1.

Rarity is a struggling fashion designer providing for her younger sister who is a total pain. Rarity is seen advertising her clothes with her friends she deeply cares about, she even made dresses according to their wishes despite how badly they looked.

Pinkie Pie grew up in a simple home, she was miserable until she discovered parties. She is seen as goofy and a total disaster everywhere she goes.

This was all just off the top of my head.
