Because she's stable, mostly. She's very rarely a main character because everything about her character screams "boring", because that's just who she is. Most dependable of ponies. She's not going to have a nervous breakdown or any of that stuff that makes the plot of an episode, but she WILL quite happily glue the bits of that plot together and provide a character that can be put into any situation easily.

Sweaty Ball is the worst of the CMC. Applebloom is at least marginally competent, and Scootaloo is fun to watch for the same reasons Dash is (only less so, obviously): she's stubborn, prone to acting before thinking with hilarious consequences, and has a bad case of hero-worship.
