I don't watch MLP, I've never seen a single episode. However, I love the art style used and I'm sure it's not a bad show if so many people like it.

I recall hearing that the creator said she made the show not just for children, but parents too. Now, I'm sure most of its fans here on /co/ aren't parents, but if it was made for adults to find amusing, there's nothing wrong with adult fans liking it.

Another thing, any fan of animation, comics, and cartoons can appreciate a show's value, regardless of its target age group. The people creating the shows are adults and I'm sure they enjoy watching their work just as much as older fans do.
