That instance takes place in a cave with nonglitchable walls and even at max level, a Simple Trick Unicorn spec can't set enough DoT and Snares to kill it before they wipe. Regarding Trixie VS the Ursa Minor, one has to remember that it was literally dropped on her doorstep in the middle of the night. It was standing right on top of her too, so Trixie had to work with what she had, quickly. All Trixie really had at her disposal was a bit of rope. Her thunder spell was more than enough to cook Dash's ass, but against the Ursa it wasn't very effective.

Maybe if Trixie had more prep time like Twilight had all day, she could have done more against it. Don't forget that Twilight couldn't defeat the Hydra and was basically murdered by the Cocktrice. She isn't too smooth herself when caught unaware.

If Trixie and the rope were higher up then she may be able to raise the rope higher, same with the water. How long she could maintain it is debatable.
