I'm too lazy to think up my own Trixie send-off episode, so I'll just go with yours since it's pretty good.

Sweetie Belle, after some pre-credits antics preparing for another talent show at school, finds out that all the ponies that had been visiting her house with potential house buyers, and her parents are moving away from Ponyville, and that she'll be leaving in a few weeks.

She breaks the news to the other Cutie Mark Crusaders, and of course they're pretty shook up, seeing that their friend is going away for good, and the Crusaders are being broken up. We get some stuff about them planning some big song for the talent show, which takes place a few days before she leaves, but then an accident a few hours before the big show happens with the equipment they're using in Applejack's barn. The barn is engulfed in flames, trapping the CMC in the burning barn.

Sweetie Belle gets out tries to get help, but the others are out in town and the solitary hose she can find is not working, so she runs back in to find the others. After some tense moments, she finds a singed and unconscious Scootaloo and Applebloom, but the roof starts to collapse, she screams, but then her unicorn horn glows, and the scream becomes a powerful wave that blasts back the debris. Using her new powers, she breaks out of the barn and rescues them all, just as Applejack returns home in panic with Big Mac.

Twilight learns everything there is to know about Friendship. Celestia summons her back to Canterlot to learn about disappointment and heartbreak.

Rarity makes it to the Grand Galloping Gala and actually does get to dance with the prince. The prince however turns out to be slightly bulkier than she imagined and much, much older.
However, the prince does choose her to be his royal bride and she joins the canterlot elite. After a prolonged farewell to her friends she joins the high society only to find out that in wealth, that which was rare(ity) is common, and she is seen as crude and vulgar compared to the posh ponies of the bourgeoisie. The prince himself admits her borderline filthy demeanor and her exotically rough and almost uneducated accent attracted him to her, but she is quickly tossed aside once her novelty faded for him.

bruised and broken she takes the soul-crushing walk back to ponyville, through the harsh winter elements with no help from passerby's who spit at her, and once she arrives she sees they erected a statue in her honor, and the plaque reads "Rarity: ponyville's diamond" and she dies at the base that night of overexposure.

Nightmare moon seeks out Twilight and her friends and teaches twilight that since she is the embodiment of twilight she can control a portion of darkness to combat celestia. twilight confronts celestia who reads back to her all the lessons she learned and wrote about in her notes and explains to her that she was grooming twilight to be her successor and ruler of the brightest day. celestia reveals that in order to perform the spell to enlarge the sun she must transform into a sun herself by fusing with her phoenix. celestia and the phoenix fuse forming a 2nd sun and ponyville begins to wither and die from the scorching sun. twilight learns that if she gives up her life she can create an eternal eclipse in front of the 2nd sun and save pony ville. she says her goodbyes, gives a thumbs up and flies into the sky. as she flies she can feel her body transforming into darkness. celestia's words echo in her head "even though you were raised by them you are not one of them..." twilight realizes the true magic of friendship is dying for those you love. twilight eclipses celestia creating twilight. the ponies of ponyville stand staring at the eclipse remembering their brainy friend. then spike shots a boners at rarity's flank making it appear that her cutie mark is winking. the end... of season 3. Silver Spoon and Diamond Tiara replace Celestia and twilight.

I know I'm late to the party:
The episode starts out with all the girls receiving the same strange letter, all it says is something like:
"You were all my very best friends and I'll think of you always. Goodbye."
They have no idea who it's from. They eventually figure out it was from the local mail mare and that she moved away. They try to talk to other townsfolk to learn more about her, but can't even find anypony who even knew her name.
They become obsessed with figuring out who she was and end up finding her empty home and chance upon her diary that's filled with nothing but loving descriptions of very casual encounters with each of the girls.
Pinkie throws a party in the unknown mail mare's honor and invite everypony in Ponyville and Twilight makes sure to introduce herself to each one and learn a little bit about them.
Twilight writes a letter to Celestia about how some times one can get so caught up in their own life that they can miss all the wonderful folks around them and that sometimes a really good friend can be hidden in plain sight.

Celestia receives the letter and considers the message and sets out and to introduce herself to Canterlot's new mail mare, the last line of the episode is her asking the gray pegasus's name.

Would a plot like this ever fly for a real episode:

One (or two) of the mane ponies have fallen ill to a rare and potentially life-threatening disease, so the rest of the group head out to unknown and dangerous territory to find a cure. After much trouble with the locals and a fight with their boss, they return home with the cure, only to find that the sick ponies are well again, the cure being as simple to find as walking into a store and buying it.

What would be the moral of this "episode", then? Need ideas if this is to be typed.
