Most of the things you see popping up a lot are just things that seemed to feel right to the fans. The characters and setting is so vivid, it's hard to believe some things aren't true, and when we see personality traits and other things getting confirmed it's pretty awesome.

Things I see a lot:
-Scoots idolizes Rainbow Dash
-Luna is still lonely and envious of her sister, even if she's too defeated to do anything about it

Other things pop up but vary from perception to perception. As for Equestria being bordered by dragons? It's probably because people like to imagine a challenge big enough to be fitting for a country ruled by two goddesses. You really have to up the stakes when certain characters can raise and set the sun at will.
