Not completely, I disliked the lastest two episodes with the Cutie Mark Crusaders and the one with Trixie was kinda "meh".

However, Zecora and Gilda are very solid and interesting characters.

I read all of Cupcakes, thank you very much. Also, Eraserhead and End of Evangelion are among my favorite films, so I have no problem with the odd and disturbing.
It simply wasn't disturbing, precisely because it was so explicit in its gore. You see, the more that is left to the imagination, the scarier something is. When the writer describes, in detail, a character flossing her teeth with intestines as shit falls out of it, it just isn't scary. It has an initial shock, and then is quickly forgotten because there isn't anything to really THINK about.
I will give Sprinkles some credit though; Cupcakes did have a decent alternate ending, and its continuation, Rocket to Insanity, was excellent.

Probably because Dash is something of an athlete.

Female athletes, especially those that do a lot of running and acrobatics (which is what human!Dash would be doing instead of flying), don't tend to have big chests. Breasts are mostly fatty tissue, and if you exercise or do physical activities a lot you get rid of most of that.

Even if human!Dash DID have large breasts, they would probably annoy her as they would constantly get in the way and feel pretty heavy when she's physically active.
