As powerful as we all believe Celestia to be, in the show she doesn't appear to put in a lot of effort, and she's certainly not omniscient. She can be caught off guard, she didn't know what parasprites were, etc. Nightmare Moon probably waylaid her when she wasn't looking and locked her up before she could get in a good defense.

On the OTHER hand, Celestia did say she'd already known about NMM's return. It's more than possible she DID just decide to lay low for awhile, so as to avoid the aforementioned waylay. Then she waits to see if her student does the work while learning important lessons about friendship, and Celestia steps in if this goes on for too long.
Luna, who came out only to find her sister was nowhere to be seen, thought "Sweet! I get the whole place to myself!", and then decided to crash her sister's party, since Celestia wasn't going to be there anyway.

First, I meant "themed" in the show as in their race setup. The pegasi clearly surround themselves with Greek motiffs. The unicorn's do not.

Also, the greeks are not responsible for that incarnation of the dragon. You can find it in Babylon, specifically in some of the art pertaining to the story of Bel and the Dragon, and you can see the wingless versions depicted on the Ishtar gate of Babylon itself. They had both types. Greece did not invent them, nor that depiction.
