I think Gilda just doesn't know how to really make friends because of how Griffons are. I can imagine they are a lot "rougher" than Pony folk, and don't usually have the same sorts of community/friendships that Ponies do. I think there is alot of competition between Griffons, and they have to build themselves up and "Be the Best, the Coolest" so to speak.

So Gilda being friends with Dash is somewhat of an anomaly, but they managed to share a connection (the love of flying) that let it happen. So when Gilda goes to Ponyville, even as Dash's friend, she's still stuck with a Griffon survival attitude. Still, she really does want friends. The first time she blew out the candles on the cake, she had a look of joy on her face that makes me think she wants acceptance, but just doesn't know how to act for it.
